Recipe: Tuscan Bites

4 C. diced zucchini, ¼ inch dice
3/4 C. diced red peppers, ¼ inch dice
1/2 C. diced red onion
1 C. kidney beans, rinsed and drained
1/4 C. cilantro paste or freshly chopped cilantro
7.5 oz. light Italian salad dressing
1 Bag Baked Frito Lay Scoops

Blend diced zucchini, red pepper, red onion and drained kidney beans in a Ziploc bag.  Combine cilantro and light Italian Salad Dressing and whisk well.  Pour contents into bag with veggies.  Close bag.  Blend.  Suggest one portion – 1 Tbsp. Per scoop.  Tuscan Bite veggie mix stores well refrigerated up to 3 full days in bag.
