Recipe: Tropical Fruit Salad

2 C. Fresh pineapple, cubed
1 Fresh avocado, cubed
1 Fresh mango, cubed
½ C. Coriander, chopped
1 C. Banana chips, cracked
½ C. Raspberry vinaigrette or poppy seed dressing
2 Tbsp. Toasted pecans
1 Tbsp. Toasted sesame seeds
2 Tbsp. Pink marinated ginger slices
½ Lime Fresh lime juice

Cut up pineapple, avocado and mango; add banana chips, coriander, raspberry vinaigrette or poppy seed dressings and nuts. Mix gently, adding fresh lime juice. Serve on platter adding ginger slices and toasted sesame seeds as garnish.

Yield: 4 servings
