Recipe: Terra Cotta Grilled Chicken Salad

1 C. Grilled chicken breast, sliced into 1/2-inch strips
3/4 C. Mild chili pepper, thinly sliced
3/4 C. Red onion, thinly sliced
3/4 C. Tomato, diced
3/4 C. Cooked beans (kidney, pinto or black beans)
3/4 C. Jicama, diced
1 Tbs. Fresh cilantro, minced
1 C. Ranch style, creamy salad dressing
1 Tbs. Catsup
  Dash Salt
  Dash Hot sauce
  Juice of 1 lime
Cilantro Sprigs for garnish, if desired

In a large bowl, combine chicken, mild chili, red onion, tomato, beans, jicama and minced cilantro; add lime juice and toss to mix thoroughly.

In a small bowl, mix together Ranch style creamy salad dressing, catsup, salt and hot sauce. Pour over salad ingredients, tossing to coat thoroughly. If desired, garnish with cilantro sprigs.

Yield: 4-6 Servings.
