Recipe: Marinated Mushrooms

2 cups Button mushrooms, quartered and blanched

1/2 cup Red onions, diced

1/4 cup Cilantro, fresh and finely chopped  

1 cup Lite Northern Italian Dressing with Basil & Romano

To Taste Salt

To Taste Ground black pepper

In a medium saucepan, boil 1 1/2 quarts of water. Place quartered mushrooms in boiling water for 15 seconds. Remove and rinse under cold water; drain well. Combine all ingredients in a large bowl and refrigerate until ready to serve.
